It really was so, so good. Sorry to hear about the cooking situation. That sounds like a pain but I bet you could do some of this in the air fryer. The deal with the dairy is that goats and sheep milk is fine because they naturally have the easier to digest proteins in their milk. You may be able to find domestic cheeses made from those that are fine. Things made from cow’s milk need to be A2. Most of the cows in Italy, France, and Switzerland are breeds that produce milk with A2 proteins. Most American cows are mostly A1. There are some A2 cows now in California — but the milk products will be specifically labelled as that.

Easier to digest milk products are easier on the gut in general, and can probably help it heal. And, depending on how sensitive you are to dairy, and how many other things are contributing to your issues, I think you can decide how important it is to you to be super careful about that. I am being careful, just to try to do this as fully as possible. Plus, European cheeses are awesome! As I said, the biggest concerns are corn, wheat, beans and lentils, nightshades like tomatoes, potatoes, peppers, and eggplants. Also, peanuts and cashews are bad. Walnuts, pistachios, macadamias, almonds, are all good.

Eventually, you can add seeded and peeled peppers and tomatoes back in, and find some work-arounds for some of the other stuff, such as cooking beans in a pressure cooker. But until your gut is healed, those need to be avoided.
